Domaine Violot-Guillemard

Domaine VIOLOT-GUILLEMARD is owned and run by the delightfully knowledgeable and generous Thierry and Estelle Violot, who not only manage their vineyards throughout several appellations, but also operate their beautiful and busy Chambre-d'Hôte, located in the heart of the village of Pommard.estelle-v-g.jpg

Thierry inherited small parcels of wonderful vineyards planted variously since 1936. Bottling just 2,200 cases each vintage, this quality artisan producer owns a total of six hectares across nine different vineyards which he farms biologically.

All fruit is hand picked and de-stemmed, then pressed in a pneumatic press prior to a four day cold maceration in open wood fermenters. All ferments begin naturally and continue for about 15 days at up to 33 degrees during which time pigeage takes place. The wine is settled before being racked to 225 litre low toast barrels (all staves are seasoned for three years) the new population is maintained at 20 per cent. Transfer of grapes and juice is done by gravity. The wines are racked once - just before the bottling takes place and are neither fined nor filtered. The Violot-Guillemard wines completely defy the old notion that Pommard is hard and needs ten years to soften.

Never having visited prior to this year, the wines were something of a revelation, displaying more generosity and flesh that I anticipated, not to mention greater elegance and refinement.  The wines are serious yet delightful expressions of their sites.
