Dominio de Pingus

Established in 1995 by Danish ex-pat Peter Sisseck, Pingus is primarily a four hectare plot of old vine Tinto Fino, the local clone of Tempranillo.  Yet it is so much more than that - Pingus is both one of the world's truly great wines, as well as perhaps the ultimate expression of modern Spanish wine rooted in absolute traditionalism.

The Pingus estate has been managed biodynamically since 2000, and has always been intended to be a wine of minimal intervention representing its terroir and history (indigenous clone of Tempranillo from ancient vines).  The grapes are harvested (by hand) when optimally ripe and destalked by hand, resulting only in perfect berries.  Yields are miniscule - a mere 10 or so hl/ha (1,000 kg of fruit per hectare, or perhaps two barrels of wine) and the wine is allowed up to two weeks pre-ferment soak before fermentation using indigenous yeasts commences.  The wine racked a couple of times during its nearly two years' elevage, and is bottled unfined and unfiltered.

Pingus is a remarkable wine that is one of the world's absolute greatest wines.
